Cost Controller (Food and Beverage)

Key Responsibilities:

• Prepare and analyse food and beverage costs daily and recommend alternatives to improve costs.
• Assist in the monthly food and beverage inventories count and extension.
• Establish and maintain a database for food and beverage inventory stock including up-to-date pricing.
• Ensure proper storage and issuance of all food and beverage items.
• Cost all food and beverage items and where practical, input these costs into the Material Control system and generate monthly potential food and beverage cost of sales.
• Check and ensure that no material is issued out from the store without requisition or approval from the respective head.
• Price all food and beverage storeroom requisitions and compute monthly food and beverage actual costs by outlet.
• Spot check on the stores department to ensure that the scales are correct, and goods are checked for quality.
• Assist management in menu costing in order to establish menu item sale prices.
• Responsible to maintain the menu pricing. Consumption and POS systems.
• Continuously study weaknesses in F&B control implemented at the Restaurant and provide suggestions for improvements.
• Prepare F&B reports as requested by management.
• Update selling prices in POS as per the instruction from management.
• Maintain the security of the information held by the department.
• Check and ensure all menu items have recipe.
• Participate in stock taking of the restaurants.
• Prepare daily staff meal cost report.

Job Requirements:

• Bachelor's Degree in finance or relevant field strongly preferred.
• Minimum 3 years of experience in a similar capacity.
• Previous hotel or restaurant accounting experience will be an added advantage.
• Excellent written and verbal skills.
• Strong presentation skills, able to explain concepts concisely and accurately.
• Must be willing to work a flexible schedule in order to accomplish all major responsibilities and tasks.
